INGREDIENTS:

  • 5 Eggs
  • 75g of Your Choice of PUREES (~3tbsp)
  • Your Preferred SWEETENER
  • Your Desired ADD-INs cooked (beans, chestnuts, diced pumpkin & sweet potato, banana, berries, etc.) 100-150g 
  • Your Desired ADD-ONs (nuts, seeds, dried fruits, etc.) 

Your PUREES (75g):

Choose from the following purees or create your combinations:

  • Yogurt (plant-based or regular)
  • Cooked or blended pumpkin, squash, sweet potato, carrot, cauliflower
  • Mashed fruits like banana, apple, peach, and more
  • Mashed avocado, nut butter

    Your SWEETENER:

    Consider using 100g of dates or opt for recommended low GI, low-calorie sweeteners like pure Monkfruit or Allulose for a low-carb diet.

    Your Desired ADD-INs:

    cooked (beans, chestnuts, diced pumpkin & sweet potato, banana, berries, etc.) 100-150g 

    Your Cake Your Way (optional add-ons):

    Customize your muffins with extras like chocolate chips, dried fruits, nuts, coconut flakes, or nut butter.

    Your Powder Routines: Enhance your recipe by adding 20g of protein, collagen, mushroom, turmeric powder, etc., along with an additional 10g of water.

    INSTRUCTIONS:

    1. Set up the Oven and Baking Tools

    Preheat the oven to 365°F and prepare the mold:
    1. Preheat the oven to 365°F.
    2. Line the baking mold with a non-stick liner or apply non-stick oil spray to the mold.

    2. Whisk the Eggs

    In a mixing bowl, whisk 5 eggs using a hand whisk or mixer.

    3. Mix the Batter

    • Add 75g of Your PUREES, 1 pouch (40g) of MOYU Mix, and Your Preferred SWEETENER to the whisked eggs.
    • Stir the mixture with a whisk or spoon until well combined. The batter should be smooth, lump-free, and sticky.
    • Mix in your chosen ADD-INs (see "Ingredients" for details)

    4. Add ADD-ONs

    Incorporate your chosen ADD-ONs like nuts, seeds, dried fruits, or others into the batter.
    Transfer the muffin batter into the prepared molds.

    5. Bake the Muffins

    For medium muffin molds, bake at 365°F for about 18-20 minutes.
    For a 1 lb loaf mold, bake at 365°F for approximately 45 minutes.

    Tips

    Keep in mind that baking times vary:

    For muffin cups, around 20 minutes.
    For a pound mold, about 45 minutes.
    Choose plain yogurt without added sugar for best results.
